Chili Lime Roasted Potatoes

Ingredients

2 pounds baby potatoes (or regular potatoes cut into bite-sized pieces)
2 tablespoons olive oil
1 teaspoon chili powder
1/2 teaspoon smoked paprika (optional)
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Juice of 2 limes
Zest of 1 lime

Directions

Preparation
  • Preheat your oven to 425°F.
  • Wash the potatoes and cut them into halves or quarters if using larger ones.
Making
  • Mix Seasonings: In a large bowl, combine olive oil, chili powder, smoked paprika, garlic powder, salt, and black pepper. Add the lime juice and zest, mixing until well incorporated.
  • Coat Potatoes: Add the potatoes to the bowl and toss them until they are evenly coated with the spice mixture.
  • Arrange on Baking Sheet: Spread the potatoes in a single layer on a baking sheet lined with parchment paper for easy cleanup.
Baking
  • Roast: Place in the preheated oven and roast for 25-30 minutes, or until the potatoes are crispy and golden brown, tossing once halfway through for even cooking.
  • Garnish and Serve: Once done, remove from the oven and let them cool slightly.
