Ingredients
2 eggs, whipped well
1/2 tsp salt
1 tbsp sugar
1/3 cup flour
1/2 cup milk
1 tsp shortening

Making
- Beat eggs well with salt and sugar
- Add flour and milk to eggs. Beat until smooth.
- Heat shortening in deep cast iron skillet (

inch round) until a drop of water sizzles in skillet. - Pour batter into skillet.
Baking
- Bake at
450
° for 15
minutes until surface is brown.
Serving
- Dot with butter and sweetened fruit, jam, syrup, or honey.
- Roll or fold from opposite sides to center, making 3 layers.
- Turn out on warm platter, sprinkle with powdered sugar.
Variations
- Fill with apple, cherry, or blueberry pie filling.
- Place

layer of thinly sliced apples over the batter just before baking.
