Ingredients

1 cup soft shortening, part butter
1 1/2 cups sugar
2 eggs
2 3/4 cups all purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
1 Tbsp sugar
2 tsp cinnamon

Directions

Preparation
  • Preheat oven to 400°.
Making
  • Mix thoroughly the shortening, sugar, and eggs.
  • Sift together the flour, cream of tartar, baking soda, and salt.
  • Stir all ingredients together.
  • Roll into balls about the size of a walnut
  • Roll in a mixture of 1 Tbsp sugar and 2 tsp cinnamon.
  • Place 2" apart on ungreased baking sheet.
Baking
  • Bake for 10-12 minutes.
  • Bake lightly until browned, but still soft.

These cookies puff up at first and then flatten out.

Makes about 5 dozen cookies.
