Ingredients
4 medium ripe bananas, mashed
1/2 cup salted butter, melted and slightly cooled
2 large eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp ground cinnamon (optional)
Pinch of salt (optional)
Directions
Preparation
- Preheat oven to
350°. - Line a 12-cup muffin tin with paper liners or grease lightly.
Making
- In a large bowl, mash the bananas until smooth.
- Add the melted salted butter, brown sugar, eggs, and vanilla. Whisk until fully combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and gently fold with a spatula until just combined. Don’t overmix.
- Divide batter evenly into the muffin tin. Fill each cup about 3/4 full.
Baking
- Bake for
18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. - Let cool in the pan for
5 minutes, then transfer to a wire rack to cool completely.
Optional Add-ins
- 1/2 cup chocolate chips
- Sprinkle tops with coarse sugar or rolled oats before baking for a bakery-style finish.
