Banana Bread

Ingredients

2 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 cup butter
3/4 cup brown sugar
2 eggs
4-6 mashed overripe bananas, about 2 1/3 cups

Directions

Preparation
  • Preheat oven to 350°.
  • Lightly spray 9x5 inch loaf pan (glass or metal)
Making
  • In a large bowl, combine flour, baking soda, and salt. Set aside.
  • In a medium bowl, mix butter and brown sugar until creamy.
  • Add eggs and mashed bananas until well blended.
  • Combine banana mixture and flour mixture into 1 bowl, and stir until moistened.
Baking
  • Pour batter into pan and bake for 55-65 minutes, or until a toothpick inserted in the middle comes out clean.
  • Allow to cool in pan for up to 15 minutes.
  • Transfer to a wire rack and let cool for an additional 10 minutes.
